Creamy Chicken and Asparagus Pasta


Okay…Since I LOVE food, recipes are the easiest things to knock of my Pinterest list.  Girl’s gotta eat right?  Now, this particular meal I made for the first time for my mom’s birthday!  By looking at it; I was immediately eager to pin it!  I mean Look at this Creamy Chicken and Asparagus Pasta by It’s creamy, it has bacon, I mean who could ask for anything more?

When I actually opened the recipe and looked at the ingredients, I became a bit worried and skeptical…(Please understand… I am NOT a fan of cream cheese) when I saw Neufchatel cheese (a lighter version of cream cheese) I panicked!  However, I gave it a try anyway….BEST DECISION EVER!!!  It was amazing, creamy, and delicious!  I couldn’t even taste the Neufchatel cheese.  I made it twice so far…I cooked the chicken whole as described in the directions, but then the second time (for time saving purposes) I cubed the chicken first then put it in the pan with seasoning and I couldn’t tell the difference.

The only thing I will say is that the step-by-step instructions does not tell you when to cut or cook the asparagus.  It just tells you when to add it to the completed mixture.  Since this is one meal that really needs to be enjoyed immediately.  Make sure to cut, cook, and set aside early on in preparations.  Once the pasta is cooked, the process moves fairly quickly, so definitely prep early!  Also keep your 1/2 cup of pasta water, but for my family, I never needed it because we prefer it the creamier the better!  I absolutely adore this recipe and so did my family!
